Brew Love: Casey Brewing and Blending Saison

casey-saison-1-2This week's Brew Love features one of Colorado's newer breweries, Casey Brewing and Blending. Nestled in the mountain town of Glenwood Springs, Troy Casey's new outfit (Casey was previously head brewer at AC Golden, and helped shape the barrel program there) has been pumping out unique barrel fermented sours for the past year. Because they are brewing a limited amount of beer each time they brew, Casey Brewing is only open when they release beer, which happens every few weeks or so.Their Saison is what they call a true Colorado beer. Casey Brewing uses 100% Colorado ingredients, from Colorado water, to barley, wheat, Crystal hops and a proprietary yeast blend. Instead of fermenting in the big stainless fermenters you see at every brewhouse, Casey Brewing has decided to do things the traditional way and open ferment their beer in oak barrel fermenters.

"After this rustic primary fermentation, the beer goes to other barrels for further aging and flavor development."

They've done around six blends of the saison to date, and I haven't heard any complaints so far. This beer is the perfect combination of sour, funk and citrus. Hopefully we see more amazing things come out way in the future! We had the chance to try almost all of their beers at the Vail Big Beers Fest, and finding a bottle close to home was a real treat. If you like things that are on the sour end of the spectrum, definitely pick this up. We got our bottle at Coaltrain and saw another few bottles on the shelf just a day or two ago.
