One of our favorite new restaurants here in Colorado Springs, Cowboy Star, has just announced their Summer Collaboration Series. We were graciously invited to one of Cowboy Star's media nights, and have been addicted to their exceptional food ever since.While the main dining room extravagant menu is definitely a fine-dining experience, we've found their Happy Hour to be one of the best deals in town. (2 beers and a Steak & frites for under 20 bucks!)DSC_5892CCThe Summer Collaboration Series is Cowboy Star's version of a beer dinner. Cowboy Star has hand picked six local area breweries to pair a four course meal with four different beers.DSC_5901CCWith the quality of food we've already experienced there, these will all sell out, and with breweries like Paradox, Pikes Peak, Bristol, Rocky Mountain and more, it's definitely something to check out.
