Whistle Pig Opens Today

UPDATE: Whistle Pig will open shortly after their ribbon cutting ceremony at 4pm on Saturday. They're playing catch up after a crazy day yesterday.A few weeks ago, the whistle pig saw its shadow, meaning a few more tough weeks for owners Rob Beers and Eric Merrell. They have been put through the Regional Building ringer, to put it lightly.DSC_1033Starting last weekend, Whistle Pig has been working the kinks out of their bar service and kitchen, to all levels of crowds. Eric told me on Wednesday, that it was standing room only for awhile last Saturday, their first "soft" opening day. In an area of Colorado Springs more known for strip malls and pawn shops, Whistle Pig is bravely trying to become the next destination for Springs area craft beer lovers.DSC_1023Both Eric and Rob are long time home brewers, and will handle the brewing for Whistle Pig collectively. We grabbed a sample flight on Wednesday and enjoyed many of their initial offerings. Keep in mind, because of the process to open in this day and age, these beers are some of the first brew days on their system. It will take time for them to learn their new systems and get larger recipes completely figured out. Most notably, their Maple Thunder exhibited some fruity esters that Rob was quick to point out, likely coming from some fluctuation in their fermentation temperatures. They'll continue to dial in their process and it's a good starting point! Our favorites from the flight included their wheat beer(which was more like a witbier) and the Mosaic IPA.DSC_1032DSC_1025We also had a chance to try some of their food. We chose the O-rings, which came out darker than we expected...not to worry, Chef Bobby Couch uses the Whistle Pig oatmeal stout in the batter. They were pumping out Caprese Wings and burgers, so make sure to check out their menu as well as what's on tap.So, as this publishes, Whistle Pig will have been open for 1 hour "officially."
