Road To Real Ale Paved By Iron Bird Brewing

DSC_0078CCTomorrow is the day, and Iron Bird Brewing is hosting their grand opening party at 402 S Nevada Ave. The event kicks off at Noon, with the taps flowing and food available from Good Golly Grub Trolley! By the looks of it, they'll have six beers flowing: a red, a stout, a rye ale and an IPA as well as two single hopped beers. Come on out and have a pint or two of real ale.Awhile back, we stopped in and talked with Aaron from Iron Bird Brewing, Colorado Springs' newest brewing outfit located on the corner of Costilla and Nevada, and checked out their progress. Iron Bird has seemingly jumped into the scene with very little fanfare and lots of secrecy, but one thing is for sure, they mean business. With a space designed by local architects Echo Architecture, who also had their hands on The Wild Goose and Manitou Brewing, the place already looks amazing. When I stopped in back at the end of July, they already had their entire brewhouse up and running, pumping out brews and filling up kegs in anticipation of tomorrow's opening.Iron Bird's taproom is very close to being complete, with the final touches being put in place today.The trapdoor to the cellar and storage is directly beneath the east side of the wraparound bar. Aaron gave me the nickel tour, showing me all areas of Iron Bird including their bright red brewhouse, their future seating and taproom area(at the time it was unfinished except for the bowling alley bar top), and even a peek into their cask cellar beneath the bar floor. The guys at Iron Bird tell me they're setting themselves apart from other area brewers by offering casked "real ale," a term coined by the Campaign for Real Ale back in 1973. Essentially the campaign's requirements for "real ale" means the beer is brewed with traditional ingredients, allowed to undergo secondary fermentation in the container from which it is dispensed, and served without the use of extra carbon dioxide. They'll also have CO2 versions on tap as well, but expect some fun and interesting cask ales in the future!We're planning on being there, so hopefully you join us!
